Here is the recipe that got me the nickname "crazy crock pot lady" from Shelf Reliance's convention. They had the wives of the executive team give a cooking demonstration using Thrive foods. I was so excited to do it! A little nervous about the cooking part, but excited for the challenge. I wanted to incorporate the crock pot for sure! Using Thrive foods is very convenient, but some nights, we don't even have time to boil water! Throwing something in the crock pot in less than five minutes during the day, when life is not quite so crazy, and then having a hot meal six hours later is a life saver (or dinner saver) in our house. It's also nice to be able to invite some of the team over for real food in between games and not stress about it! I happened to mention that if they work during the day, they could simply throw the freeze dried ingredients in a baggie in the morning and haul the crock to work. Then on lunch break, they could pull out the crock pot, dump in the freeze dried food, some water and plug it in at work. Then, take it home and not have to worry about dinner!! I said they might be known as the crazy crock pot lady, but dinner would be done, family would be happy, and money would be saved! The name kind of stuck to me so I am embracing it lovingly. As long as people remember and try it, it's worth it!
Crockpot is not Cute but Convenient BBQ Chicken and Cornbread!

Mix the following in the crock pot (6 qt crock is best for this, or adjust as needed):
2 ½ c THRIVE Chopped Chicken
¼ c THRIVE Sweet Potatoes
½ c THRIVE Sweet Corn
¼ c THRIVE Chopped Onion
3 ½ c water
1 bottle of your favorite BBQ Sauce (about 18 oz)
In a separate bowl mix:
¼ c THRIVE Butter Powder
¼ c + 2 T THRIVE Sugar
¼ c THRIVE Sweet Corn
1 T THRIVE Instant Milk
2 TBS THRIVE Whole Egg Powder
1/8 tsp THRIVE Salt
1 c THRIVE White Flour
2 tsp THRIVE Baking Powder
½ c THRIVE Cornmeal
1 c + 2 TBS Water
½ c THRIVE Cheese
(you can do ¼ c Monterey Jack and ¼ c Cheddar, or whatever combination you want)
Spoon over the top of BBQ Chicken right in the crock pot. Smooth out a little so entire top is covered in cornbread. Cook on low for 6 hours. You can switch to high to brown the top a little at the end if you wish. Enjoy!

Usage example:
I love my Thrive foods from Shelf Reliance. I am capable of making convenient meals for my family that fit well with our needs, activities and plans. Cooking with Thrive involves little trouble or effort. My home store, full of Thrive foods, is situated in the kitchen pantry so as to allow easy access to it. Dinner occurs now at home, around the table, at a time that is useful for all eight of us to gather. Thrive certainly is convenient!
